Cut the bread into 1 cm thick slices and the cheese into narrow slices. Grind garlic, parsley, mint and mix with the spices. On the bottom of a baking dish spread bacon or possibly butter. This gives the Zuppa Gallurese a special flavor, apart from the fact that it does not burn. Place the bread, cheese and the herb mixture alternately on top. Pour the beef broth slowly over it, so that it is well absorbed by the bread. Then put it in the already heated stove until the surface is golden brown. Serve lukewarm.

Zuppa Gallurese is a specialty from the north of Sardinia (Gallura). It is served as a first course. However, since it is very filling, a little something light should be prepared as a second course or possibly entrée.
