For vegetable soup, first peel and coarsely chop the vegetables.

Bring water with vegetables, salt, pepper and parsley to a boil. Bring soup to a gentle simmer for about 15 minutes until vegetables are tender.

Remove vegetables and cut into small pieces. Serve vegetable soup as desired with chopped vegetables or clear.

Preparation Tip:

Refine vegetable soup to taste with additional herbs, e.g. lovage.
