For the toast with fried herb mushrooms, cut the young onion into slices and rings. Clean the herb mushrooms, cut into slices about 4 mm thick and fry in hot olive oil until golden brown on both sides.
Remove the mushrooms from the pan and drain on a piece of kitchen roll. In the same pan, sauté the young onions, deglaze with the soy sauce and simmer over low heat for 1-2 minutes.
Meanwhile, halve and pit the avocado, dice the flesh while still in the skin, scrape out with a soup spoon and drizzle with lemon juice.
Spread the young onion on the toasted toast slices, place the herb mushrooms on top and spread the avocado cubes. Add a little more salt and pepper and serve as a light dinner or snack.

Instead of the herb mushrooms you can also fry other mushrooms, for example mushrooms or porcini. Toast with fried herb mushrooms also tastes very good when topped with mozzarella cheese.
