Separate the eggs. Beat the sugar and egg yolks with a mixer.

Once the mixture is nice and fluffy, mix in the mascarpone.

Mix the coffee, rum and powdered sugar in a shallow container.

For the typical layers of the famous Italian national dish Tiramisu, now line a mold alternately with sponge cake and cream. Proceed as follows:

Soak the biscuits in the coffee just beforehand and then layer them in. Spread the cream over it and smooth it down. Then apply another layer of soaked biscotti. In this way, layer after layer is put in until all the biscotti and all the cream is used up.

The last layer must be cream. Smooth this out neatly with a knife or a cake palette.

Now chill the tiramisu for a few hours.

Before serving, sprinkle the tiramisu with cocoa powder.

Preparation Tip:

Portioning this Italian delicacy is not always easy. The first piece - just as with casseroles - is sometimes not particularly pretty to look at. There is a remedy for this: If you don't want to cut perfect tiramisu rectangles, you can simply lift out individual portions with a large spoon.
