Halve or quarter 4 cloves of garlic, depending on size. Grind or chop the chilies. Rub the fish with pepper, salt and the ground chilies.

Make deep notches about 1 cm long at regular intervals all around with a sharp kitchen knife. on both sides, the fish is then larded with the garlic cloves in the notches.

Roughly chop the basil, fresh chilies and remaining garlic cloves. Season the inside of the fish with pepper and season with salt and stuff with the kitchen herb and spice mixture and a few knobs of butter.

Place the fish in a gratin dish, cover with butter flakes and cook in a heated oven at 240 °C, convection oven 190 °C, for about 40 minutes, the first 20 minutes covered and the rest of the time uncovered.

Serve with brown rice or basmati rice and green salad.

Our tip: As an alternative to fresh herbs, you can also use frozen – these are also characterized by a fresh taste!
