This is the recipe for the best ribs ever. The trick is to roast the ribs with a piece of pork belly at a relatively leisurely pace. The spices and the escaping gravy make a creamy sauce, which you spread over the ribs while they are roasting.

Preheat the stove to 180 °C. For a spicy marinade, grind the garlic cloves together with the other spices and add the olive oil. Coat all the meat with the marinade and place it on a baking tray. Cover with foil and roast for 20 min.

Mix the grated peel and the juice of the citrus fruits with the honey. Remove the meat from the stove, remove the foil and brush the ribs with the honey mixture. Roast for another 25 min and baste with the gravy from time to time.
