For the spelt spaetzle with celery and fresh herbs, stir flour, eggs and water into a viscous dough. Season with nutmeg and salt. Using a spaetzle slicer, shave spaetzle into boiling water and bring to the boil briefly. Leave to stand for a while, drain in a sieve and quench in cold water.
Wash celery and fennel and cut into fine strips. Wash and finely chop the herbs.
Heat olive oil in a pan. Sauté vegetables in it. Add spaetzle, stir and fry a little. Add herbs and season with salt and pepper.
Serve the spelt spaetzle with celery and fresh herbs with crisp lettuce.
