For the soup of the gods, finely chop the ginger. Cut the spring onions into fine strips. Mix the eggs together, beat well.

Heat the soup, add the ginger, bring to a boil. Slowly drizzle the beaten eggs into the soup using our “drizzle in” method.

Do not stir until all of the eggs are in the soup and the soup begins to rise. Turn down the heat, simmering for just a few seconds.
