Briefly scald and peel the almonds, soak the raisins in grape juice. Cut the skate wings in half, season with salt and pepper from the mill. Fry in hot olive oil on both sides for 2-3 minutes each and keep warm. Add raisins along with grape juice and bring to a boil briefly. Mix in almonds, lemon juice and cinnamon powder. Stir in a little olive oil and season again to taste. Arrange the skate fillets on warmed plates and pour the juice over them.
