Instructions:

For the semolina slices with elderberry, add durum wheat semolina to milk and boil gently for 20 minutes, stirring continuously, until a firm semolina mixture is formed.

Remove from heat and add sugar, egg yolks, a pinch of salt and butter. Spread on a baking sheet about 1, 5 cm thick and let cool in the refrigerator.

Rinse the elderberries.

Cut semolina mixture into squares about 5 cm in size and fry in hot clarified butter until golden brown on both sides. Sprinkle with cinnamon sugar.

Bring water, elderberries and sugar to a boil, skim and boil down slightly for about 15 minutes. Sweeten with bee honey.

Mix the juice of one lemon and cornstarch and thicken the elderberry with it.

Serve the semolina slices with elderberry.
