For the raspberry jam with star anise, sort out the raspberries, wash and dry them. Put them in a large pot, add the jam sugar and mix.
Puree with a hand blender, add star anise and let marinate for at least 6 hours. Heat fruit puree and boil for 5 minutes until bubbly.
Fish out star anise, add lemon juice, boil again. Pour the raspberry jam with star anise into clean screw-top jars and seal tightly immediately.
