Rinse fish, dry, cut lengthwise. Sprinkle with juice of one lemon, season with salt, season with pepper. Chop kitchen herbs. Mix half of the kitchen herbs, spread evenly on the fillets. Roll up fish and pin. Place rolls in a greased gratin dish. For the sauce, bring whipping cream and wine to a boil. Fold in mustard and remaining kitchen herbs. Mix in sauce thickener, bring to the boil again, season to taste. Pour the sauce over the rolls and sprinkle with shrimps. Bake at 200 °C for about 20 minutes.
