Instructions:

Slice the melanzani, salt on both sides, set aside and let stand (about 30 minutes).

Then dab off the drained water and cut into small cubes. Cut the onion, bell bell pepper and zucchini into small cubes as well. Cut the mushrooms into slices.

Heat some olive oil in a pan. First fry the onion and then the melanzani until they have taken on some color. Then add the rest of the vegetables and fry them.

Deglaze with a little water and let it steam for a while.

Stir in the pesto and the spices and, depending on the desired consistency, add a few spoonfuls of the pasta water.

While the vegetables are steaming, put water for the pasta, salt to boil and cook the pasta according to package directions.

Strain the pasta, arrange it on two plates and spread the vegetable sugo over it.

Preparation Tip:

If you like, you can sprinkle with Parmesan cheese. As a side dish fits a green leaf salad.
