Instructions:

Remove the skin from the cucumbers, cut them in half lengthwise and remove the seeds. Sprinkle with salt and leave a little bit.

Dice the bread and place in a container. Bring the soup to a boil and pour over the bread. Leave to stand for a little while.

Finely chop the bread, squeeze the garlic clove and add it. Add kitchen herbs, butter and ricotta, mix everything together to an even amount.

Dry the cucumber halves with kitchen roll, season with pepper and spread the filling evenly inside.

Cover a baking tray with parchment paper, put the stuffed cucumbers on it and put it in the upper half of the oven at 200 °C. Bake for about 20 minutes.

Serve with tomato risotto.
