For the mozzarella pofesen on arugula salad, first cut the mozzarella into 6 slices and sprinkle with pepper. Place one mozzarella slice between each two baguette slices and press down firmly.

Heat some olive oil in a frying pan and fry the mozzarella pozzes in it until golden brown on both sides. Lift out and pat dry on paper towels.

Marinate arugula with balsamic vinegar and olive oil. Season with salt and pepper and arrange on plates. Spread mozzarella cheese on top and garnish with cherry tomatoes and caper berries.
