Rinse the rosemary, shake dry and pluck the needles from the branch. Peel the garlic cloves and chop them with the rosemary needles and the anchovies. Mix everything with the oil. Cut the peppers in half, clean and rinse them. Rinse and clean the zucchini. Rub the mushrooms dry with kitchen roll only.

Cut everything into bite-sized pieces, mix with the marinade and marinate for 6 hours. Get a grill pan really hot, lift the vegetables out of the marinade and fry them heartily in the frying pan so that they get color. Then reduce temperature, gradually add the marinade and finish grilling the vegetables for about 5 minutes. Roast the pine nuts until golden brown and add to the vegetables with the vinegar, season with salt and pepper.
