For the Lemon Cheesecake, line a cake base with baking paper and preheat the oven to 170 °C. For the base, finely crumble the cookies in a freezer bag (a rolling pin works well for this), melt the butter and mix with the vanilla sugar to the cookie crumbs.

Cover the cake base with the cookie mixture and press down firmly. Mix all the ingredients for the filling well and spread on the cookie base. Bake the cheesecake in the preheated oven for 45 minutes to 55 minutes.

If the cake takes color too quickly, cover it with baking paper.
