Instructions:

For the lemon casserole preheat the oven to 180°C.

Peel the lemons, remove the pips and cut into cubes. Boil down the preserving sugar, lemon zest and ginger for approx. 10-15 minutes and cool well.

Blend QimiQ until smooth and mix well with lemon juice, sugar and egg yolks using a mixer. Mix in the cooled lemons.

Mix flour and breadcrumbs. Beat the egg whites with the granulated sugar until stiff and fold gently into the QimiQ mixture, alternating with the flour mixture.

Butter a baking dish (approx. 30 x 20 cm) and sprinkle with powdered sugar. Pour in the casserole mixture and bake in the preheated oven for approx. 40 – 50 minutes. (cover with foil in between if necessary) Serve with QimiQ cinnamon mousse if desired. For the cinnamon mousse, whisk QimiQ with cinnamon powder and powdered sugar until smooth and fold in whipped cream. Chill well in a bowl and serve with the lemon soufflé.
