Skin the tomatoes, remove the seeds and cut into strips. Coarsely dice chicken breasts and smoked ham. Fry the chicken and ham in heated oil. Add the chopped vegetables and the tomatoes, fill up with chicken soup and let it boil briefly. Season heartily with the Cajun spice. Pour everything into an ovenproof dish and spread the long-grain rice evenly on top. Cook in the heated oven at 180 °C for approx. 10 min.

Tip: Cajun seasoning is a spicy seasoning for poultry and rice dishes. It keeps for a long time as a “ready mix” in a screw jar: consisting of 1 tbsp garlic powder, 1 tbsp onion powder, 2 tsp white pepper from the mill, 2 tsp black pepper from the mill, 1.5 tsp cayenne pepper, 2 tsp dried thyme and 1/2 tsp oregano.

Tip: Always use an aromatic ham, it will give a wonderful touch to your dish!
