For the elderberry rose ice cream, wash, sort and pluck elderberries. Place in a bowl and mash with a potato masher.

Bring to a boil and mash through a liquidizer. Bring juice to a boil again and add rose sugar, remove from heat and stir in liqueur and rose water, let cool.

Pour into small bowls and freeze in the freezer for at least three hours.
