Flour, curd, chopped butter and a tiny bit of salt on a countertop form. chop at the beginning with a large kitchen knife, then knead with your hands until smooth dough. Wrap in plastic wrap and refrigerate for about 1 hour.
Cut ham and cheese into small cubes. Season with salt and pepper.
Roll out dough on a lightly floured work surface to about 1/2 cm thick. Wheel out squares (10 x 10 cm) (or cut out with the back of a knife). Brush the edges with egg white. Form a tablespoon of filling in the center of each. Fold into a triangle and press firmly at the edges. Place the pockets on a greased baking tray and brush with beaten egg yolk.
Bake in a heated oven at 200 degrees Celsius (gas mark 3, fan oven 180 degrees Celsius).
Bake for 20 minutes.
Tip: Always use an aromatic ham, it will give your dish a wonderful touch!
