For the ham and feta cheese strudel, preheat the oven to 220 °C top/bottom heat. Separate the eggs. Put the egg whites in a bowl. Take the yolks for coating.

Chop the spring onion and ham and mix with the egg whites. Add feta cheese and mash with a fork.

Cut both puff pastries in half (makes 4 small strudels), spread the mixture evenly on the strudel sheets, brush the edge of the puff pastry with yolk (“glue”). Form the strudel. Also brush the outside with yolk and bake the ham and feta cheese strudel on a tray with baking paper in the oven until golden brown.
