Sauté onions, potatoes and leeks well. Set aside and cool, season. Roll out the dough (if necessary and you have not bought a ready rolled out) thinly. Pour half of the puff pastry into a greased mold. Put half of the cooled filling on top, put half of the cheese on top, then the rest of the filling, apple and the rest of the cheese. Close with the other half of the puff pastry. Make a cross in the middle to give it air. Brush with egg yolk. Bake in a heated oven at about 180 °C for about one hour until golden brown.

Notes: This sweet and savory dish takes its unusual name from the time when cholera raged in Valais and food could not be exchanged. The food had to be prepared from what the peasant household had to offer: potatoes, onions, flour, cheese, milk, etc.
