Cut the grapefruits in half and score them all around so that the flesh only hangs from the peel in the center. Dry the cut surfaces and place on a plate in the freezer for about 15 min.

Then mix the sour cream or crème fraiche with the lemon zest, the juice of one lemon, the ground coriander and the sugar until smooth, cover and also put in the freezer to cool.

Repeatedly take the grapefruit halves out of the freezer, sprinkle each with 2 tbsp brown sugar, shape onto a baking tray and caramelize on the top rack under the heated oven grill at 300 °C for 5 to 10 min.

Serve together with the lemon sour cream.
