Instructions:

For the gingerbread, beat eggs, honey and sugar until well fluffy. Mix flour with baking soda, salt, vanilla sugar, gingerbread spice, salt and lemon zest and add to the fluffy mixture.

Knead well to form a firm dough. Let the dough rest overnight. Roll out the dough to a thickness of 5 mm and cut out any shapes.

Place on a coated tray (or baking paper) and bake in a preheated oven at 230 °C for about 15 minutes. Let cool and glaze with warmed chocolate icing.

Preparation Tip:

You can decorate the gingerbread in any other way you like or even cover it with a different glaze.
