Instructions:

For the Gingerbread Poppy Seeds, line a baking sheet (with sides) with baking parchment.

Cream butter, lemon and cane sugar. Add gingerbread spice. Gradually beat in yolks.

Mix poppy seeds and gingerbread and stir into the butter mixture. Beat egg whites and granulated sugar until stiff and gently fold into the mixture.

Spread the dough onto the baking tray to a good finger thickness and bake in the oven at approx. 170 °C for about 45-50 minutes.

Allow the gingerbread poppy seed slices to cool briefly, cut into small squares and arrange on plates. Garnish with nougat, cranberries, hazelnuts and gingerbread.

Lightly sprinkle the finished gingerbread poppy seed slice with powdered sugar.
