For the roasted sardines with garlic tomatoes, pluck the basil leaves from the stems and blend in a food processor with the lemon juice, peeled garlic cloves and a little olive oil to make a puree. Puree with salt and pepper. Rub the sardines with the puree.

Heat the remaining olive oil in a frying pan. Roll the sardines in a little flour, tapping off excess flour. Fry in the olive oil on both sides.
