Prepare:

Cut chicken into small narrow pieces. Chop garlic. Beat eggs. Chop cilantro into small pieces. Coarsely chop peanuts. Cut spring onions into rings. Pour boiling hot water over noodles and pull until tender, drain well.

Sauté garlic and chicken in half the oil in a large skillet until chicken is browned. Add shrimp, stirring to cook briefly, then transfer all together to a suitable bowl.

In the frying pan, toast the beaten egg into a thin omelet. Remove, cut into thin strips.

Briefly stir-fry bean sprouts and spring onions, remove from frying pan.

Add noodles to frying pan, add oil left over, fry briefly over high heat, then add fish sauce, soy sauce, pepper and sugar and turn to the other side, picking at it with chopsticks as you go. When the noodles start to color, stir in the meat mixture, then using the chopsticks, fold in the bean sprouts and spring onions, and finally the omelet strips. Mix everything well until it is really hot.

Garnish with the coriander greens, peanuts and chili flakes.
