Instructions:

First, put flour, salt, yogurt and soft butter in a bowl. Heat water and milk to lukewarm, dissolve yeast in it, add to flour. Add bread spice if desired.

Knead the yeast dough until it separates from the edge of the bowl. Cover and let rise in a warm place for 60 minutes.

Preheat oven to 230 °C at top/bottom heat.

After the rising time, work the dough into a round shape, form into a bun and place in a floured proofing basket for approx. 45 minutes. Instead of a proofing basket, you can also use a bowl lined with a floured tea towel.

Cut or pierce the top of the bread to allow air to escape.

Place in the preheated oven on the middle shelf, immediately turn down the temperature to 190 °C and bake for about 50 – 60 minutes.

The bread is ready when it sounds hollow when tapped.

Preparation Tip:

To make the bread more digestible, you can make the dough the day before. A longer resting time makes the bread easier to digest. After making the dough, put it in the refrigerator overnight, reducing the yeast by half.
