Instructions:

For the crepes with apples, first prepare the batter.

For the batter, whisk the eggs with milk, flour, salt and put in the fridge for 30 minutes, covered. Stir in the melted butter and fry 4 crepes in a larger pan (crepe pan).

While the batter is resting in the refrigerator, prepare the filling. For the filling, peel, core and slice the apples into eighths.

Melt the sugar in the butter and add the apples, sauté briefly, deglaze with cider and steam for a few minutes.

Dice all the cheese and mix with 1 cup of crème fraiche and pepper. Fill the crepes with apples, cheese cream and 1 teaspoon of peppercorns each and fold into quarters.

Garnish with a dollop of creme fraiche and cranberries and parsley.
