For the cream of pumpkin soup, first cut the pumpkin into small pieces, cover with water in a pot and boil until soft with the soup cubes.

Meanwhile, finely chop the onion. Once the squash is soft, drain the clear soup and set aside. Sauté the onion in a saucepan and add the soft pumpkin pieces.

Blend well with a hand blender. Then stir in some clear soup, the cream, the creme fraiche, the juice of half an orange and some grated ginger.

Add more or less clear soup as desired

Preparation Tip:

When serving, spread a little pumpkin seed oil and pumpkin seeds over the cream of pumpkin soup.
