In Israel, with its Mediterranean climate, fruits and vegetables thrive magnificently. And our cold dish made from fresh fruit also comes from Israel. Speaking of which, it’s called Marak Perot Kar there.

Strawberries and grapes should be rinsed. Drain well. Remove the stems from the strawberries and pluck the grapes from the stems. Place in a saucepan. Rinse melon, peaches and apples under cold water and drain well. Peel melon, cut in half and remove seeds. Cut into 3 cm cubes. Blanch (scald) peaches, skin, core, cut in half. Dice flesh as well. Peel apples, cut into eighths and also core. Add everything to the saucepan. Boil two-thirds of the lemon juice, water and sugar. Turn down heat. Steep fruit for 15 minutes. Strain through a fine sieve. Add remaining lemon and orange juice, stirring. Cool. Refrigerate for 60 min before serving, as it must be served ice cold.

Remove from refrigerator. Divide evenly among 6 soup plates. Top each with a teaspoon of sour cream.
