For the cheese crackers, first preheat the oven to 180 °C. Cook the potatoes for 20 to 25 minutes. Drain, peel and press through the potato press. Stir in the flour and half of the butter. Knead the potato dough well and roll it out on a floured surface to a thickness of 5 mm.

Mix the gorgonzola with the remaining butter and the walnuts. Cut the dough into small triangles and top half of them with matching cheese slices.

Spread with the gorgonzola mixture, place a second piece of dough on top, pressing the edges well. Place on a baking sheet and brush with egg yolk. Bake for 15 minutes, remove from heat, brush again with egg yolk and sprinkle with walnuts. Bake the cheese crackers for another 2 minutes.

Preparation Tip:

The cheese crackers are a super snack for in between or for parties.
