A great cake recipe for any occasion:

For the dough, put flour, powdered sugar and salt in a suitable bowl. Add fat and cheese and mix everything together with the dough hook of the hand mixer until fine crumbs.

Add iced water and juice of one lemon and knead into a smooth dough. Form into a ball with your hands and wrap in plastic wrap. Chill in the refrigerator for at least 1 hour.

Preheat the oven to 200 °C (gas 3). Roll out the dough and line a cake springform pan (22 cm) with it. Prick the base a few times with a fork. Cover the bottom with aluminum foil and weigh it down with legumes. Bake ‘blind’ for 10 minutes. Then remove foil and legumes. Adjust heat to 180 °C (gas 2) and bake the base for another 5-8 min. Brush with egg white to prevent it from softening. In the meantime, whisk together the egg yolks and whipping cream. Add instant vermouth, clear soup, salt, pepper, nutmeg and cayenne. Stir in spring onions. Pour mixture onto pastry shell and bake all together for 30-35 minutes. Serve immediately.
