Simmer over medium heat for 12-15 minutes, until the carrots are lightly caramelized. Add the vinegar and simmer gently for 1 minute more. Remove from heat and season with salt. 3.
Chop the parsley. Arrange the carrots in a baking dish and when cool, sprinkle the parsley over them and bring to the table
