Finely grate the zest of the lime and orange and squeeze out the juice.

Cut the vanilla stem lengthwise and scrape out the seeds. Peel the ginger and chop or grate very finely.

In a small frying pan, bring the limes and ginger, vanilla seeds, orange juice and sugar to a boil. Remove from heat and add honey. Cut the passion fruit in half, scrape out the pulp with a spoon and add to the honey liquid form. Add the rum as well.

Remove the skin from the bananas. Place 1_banana on each 1_piece of aluminum foil and spread a little passion fruit-ginger sauce evenly over it. Close the foils into packets and place them on a baking tray.

Bake the bananas in the oven heated to 200 °C on the middle rack for fifteen to twenty min.

Put the still hot foil packets on plates, each guest opens the packet at the table equally. Serve with 1 scoop of vanilla, coconut or chocolate ice cream.
