Instructions:

Remove the adhering fat and skin from the poultry livers. Briefly rinse the livers and finely grind them in a hand mixer until well drained.

Soak the white bread in hot milk and squeeze well, stir with the egg into the liver puree. Add as much white bread crumbs as necessary until you have a malleable mixture. Season with lemon peel, marjoram, salt and pepper and form small balls.

Heat plenty of oil in a deep fryer and fry the liver dumplings in it for a few minutes until golden brown. Take out and drain well on kitchen roll.

Serve as an ingredient in a consomme or in a vegetable soup.
