For the American muffins, melt butter over low heat. Mix flour with sugar, baking powder and salt. Beat eggs in a bowl with a fork.
Add the melted butter and milk to the eggs, pour into the flour mixture and mix everything together with the whisks of a hand mixer until the batter forms a lump.
Fill the greased cups or muffin tins about 2/3 of their height with the batter. Place on the broiler of the oven and put in the cold oven (middle rack). Bake the muffins at 180 °C (convection oven: 160 °C ) for about 30 minutes until light brown.
Remove from the stove, let rest in the cups or possibly molds for 5 minutes. Remove muffins and serve while still warm or let cool on a cooling rack.
Preparation Tip:
Cut the still-warm American muffins underneath the "head", spread with strawberry jam, for example, and reassemble.
