Instructions:

Stir boiling sugar, water, cornmeal and salt in a large baking bowl. Allow to swell for 5 min. Then fold in milk and swell for another 5 min. Combine flour and baking powder in a medium baking bowl. Stir eggs into cornmeal mixture. Add flour and stir all ingredients together until smooth.

Heat a large skillet over medium heat and brush with a tiny bit of oil. Add 1 heaping serving spoonful of batter to skillet and bake 3- 5 min until bottom of pancake is golden brown and top is holey. Turn and let other side brown.
