For the mixed bread, mix 100 ml of lukewarm water with the yeast. Add a little flour. Stir and let stand for 2 hours.
Mix the pre-dough with all other ingredients and knead well. Knead every 30 minutes and repeat 2x.
Shape the dough into a round loaf. Cover well with flour all around and place on a baking tray.
Preheat the oven to 240° and put the tray in the oven. After 10 minutes, reduce the temperature to 200° and bake the mixed bread for 50 minutes.
Preparation Tip:
The mixed bread tastes best fresh with butter.
