A delicious strawberry recipe!
From the scallops, remove the white nuts, rinse, clean and dry. Using a fret knife, which is a serrated messer, slice horizontally about seven to eight mm thick.
Pepper and season with salt and roast in olive oil on both sides at high fire for half a min each (do not roast too long or they will become hard! In the middle the nuts must remain almost raw).
Fry the strawberries in a little olive oil very briefly, add the orange fillets and remove them from the stove immediately. Put them in a sieve and mix the juice with a little lemon zest, crushed green pepper berries, salt and a little olive oil to make a dressing.
Arrange a wreath with the fruits and in the center arrange the fried scallops. Drizzle the fruit dressing over the scallops.
