(*) For 20 apricot dumplings or 30 plum dumplings, place curd cheese or layer cheese in a dish and drain through a sieve overnight. Rinse and core the fruit.
Put the dough ingredients, i.e. cottage cheese or flour, butter, cottage cheese, eggs, salt, in a large enough bowl, knead well and rest in the refrigerator for 15 min.
In a large frying pan melt butter. Add crumbs, stir and turn off the plate in time, otherwise they will char.
Form dumplings: Flatten about a tablespoon of dough per dumpling with floured hands and fold a piece of fruit into it.
In between, place water in a large saucepan until it comes to a gentle simmer. Carefully place finished dumplings in the water and simmer on low heat for 8 (plums) to 12 (apricots) minutes. Then drain, roll in the breadcrumbs and sprinkle with sugar and/or cinnamon.
