For the herb soup, cook the lettuce, spinach, onion and the herbs in the soup for about 10 minutes on low. Strain the soup through a sieve.
Mix the yolks with the cream or crème fraîche and add to the soup, season with salt and pepper. Sprinkle with chives to serve.
Preparation Tip:
If you like, toast a few croutons and sprinkle them into the herb soup just before serving.
