For the balsamic honey chicken breast, wash potatoes and cut into wedges. Heat 3 tablespoons of oil and fry potatoes for 8 minutes, turning.
Season with salt and pepper and place in an ovenproof dish. Add the thyme and cook in a preheated oven at 200 degrees for 15 minutes.
Meanwhile, heat the remaining oil and brown chicken breasts over medium heat for 5 minutes. Season with salt and pepper, then remove and let rest wrapped in aluminum foil.
Wash spinach and spin dry. Finely dice onion and garlic. Heat butter in a pot. Sauté garlic and onion until translucent.
Add spinach and steam for 3 minutes. Season with salt and pepper. Drizzle meat with honey balsamic sauce and serve the balsamic honey chicken breast with potatoes and spinach.
