For the buttermilk mousse, mix buttermilk with sugar, orange juice, orange zest and rum and season to taste. Fold in 1/4 l whipped cream.
Soak gelatine in cold water for 10 minutes, dissolve in a bain-marie, let cool slightly and mix with the buttermilk. Pour liquid into bowls and let set.
Sprinkle the buttermilk mousse with grated chocolate and serve.
Preparation Tip:
Fresh seasonal fruits go well with the buttermilk mousse. Grated or chopped walnuts add some bite to the dessert.
